Step-by-Step Recipe (English)

Heat the Milk: Pour 1 cup of milk into a small saucepan and heat it on medium flame.

Add Spices: Stir in the turmeric, black pepper.

Simmer: Bring the mixture to a gentle boil, then lower the heat and let it simmer for 3–4 minutes to let the flavours infuse.

Strain & Sweeten: Turn off the heat and strain the milk into a mug. Let it cool slightly, then stir in honey or jaggery (avoid adding honey to boiling milk).

2. Khapli Atta Bati Recipe

Kisanveda Khapli Flour (Emmer Wheat) / खापली गेहूं का आटा: 2–3 cups

Fresh Curd / ताजा दही: 1/2 cup (makes the batis tender inside)

Desi Ghee / देसी घी (Moyen & Topping): 3–4 tbsp + generous melted ghee for serving

Cumin Seeds / जीरा: 1/2 tsp

Fennel Seeds / सौंफ: 1/2 tsp

Step-by-Step Method (English)

Dry Mix (Images 1 & 2): In a large brass parat, take stoneground Khapli flour. Add cumin seeds (jeera), fennel seeds (saunf), and salt. Mix thoroughly by hand.

Moisturize with Curd & Water (Images 3 & 4): Make a well in the center of the flour. Add fresh curd, a dash of melted ghee, and water gradually. Rub and crumble the flour into a coarse, wet-sand consistency before coming together.

Knead & Shape (Image 5): Knead into a firm, non-sticky dough. Pinch off portions and roll them smoothly between your palms into firm, round bati balls.

Slow-Roasting on Chulha / Clay Stove (Image 6): Place the batis on a hot cast iron tawa over a wood-fire chulha (or oven/tandoor). Cook on low embers, turning regularly to get an even, golden-crusted bake.

Ghee Infusion & Serve (Image 7): Crack open the top center of each hot bati with your thumb or spoon, creating a cup, and ladle hot golden desi ghee straight into the core until fully saturated. Serve hot.
3. Crispy Onion Pakoda / प्याज के पकोड़े (Kanda Bhaji)

Step-by-Step Recipe (English)

Sweat the Onions: Place thinly sliced onions in a mixing bowl. Add salt, green chillies, ginger, ajwain, turmeric, red chilli powder, and coriander. Squeeze and massage the onions well with your hands for 2 minutes to release their natural moisture.

Make the Coating: Add besan and rice flour to the onions. Mix thoroughly without adding extra water; the moisture from the onions is usually enough to form a thick, light coating around the slices. Stir in 1 tbsp of hot frying oil for extra crunch.

Heat the Oil: Heat cooking oil in a deep kadai/pan on medium-high flame.

Fry to Golden Perfection: Drop small, loose clusters of the onion mixture into the hot oil. Do not shape them into dense balls. Fry on medium heat until golden-brown and crisp on all sides (3–4 minutes).
